Most people seemed happy with their trip, but I did notice a few complaints of overcrowding. If we do a weekday morning trip in late June, are we going to be packed shoulder to shoulder?

It is very possible you will experience overcrowding. By then school is out and lots of folks head to Belmar. Consider 2 options: Arrive early and look over the other boats. The Princess is largest and fastest but there are options (Golden Eagle, Ocean Explorer) Or Drive a few more miles down to Brielle or Point Pleasant and consider the Jamaica II or Norma K Have a great day !
