Which trail would be considered easy to moderate for first time hikers? We would like to hike down to the beach, but are relatively inexperienced. I'm looking for something that is maybe 2 hours roundtrip max.

Sorry, I'm late seeing this - you've probably gone there by now. We parked in the Indian Beach lot then walked up towards the stairs. To the right there is a sign showing you how long each trail is, so you can decide which one to take by how many miles round-trip you think you can hike.
I'm not understanding which access trails are currently closed right now in late June/early July? Can you still access a trail down to the beach via a parking lot? What else do you recommend in the area besides Indian Beach for a five and nine year old and two adults?
Would you recommend going to the part of the beach with Haystack Rock and Ecola State Park with Indian Beach on the same day or do that over two days? I have a nine year old and five year old coming along too.

You could easily do both if you start in the morning. With children, I would bring arrive late morning, bring a picnic lunch and have it overlooking the beach. From there, after hiking to Indian Beach, you can drive up to Haystack Rock and explore the beach if it's not too windy.
